FATOUSH SALAD
(A MIDDLE EASTERN SALAD)
Fattoush is one of the most well-known Middle Eastern salads also known as the ‘peasant salad’ in Lebanon. It's a colorful tossed salad with a pomegranate dressing. If you've never made a Middle Eastern salad before, this is a delicious and healthy place to start.
INGREDIENTS
- 2 lbs tomatoes
- 1 lb cucumbers
- 1 bunch green onions
- 1 bunch green mint
- 1 bunch italian parsley
- ½ bunch red radish
- 20 leaves romaine lettuce
- 1 large green bell pepper
- ½ cup purslane leaves (optional)
- 2-3 cloves garlic
- ½ cup freshly squeezed lemon juice
- 2 tbsp Cortas sumac
- 1/3 cup Cortas pomegranate molasses
- 1/3 cup Cortas extra virgin olive oil
- 5 lebanese pita bread loaves
- ½ to 1 tsp salt
METHOD
Separate the pita bread loaves, sprinkle a bit of sumac and olive oil on them, cut them into 1x1 inch squares, and toast them in t
he oven until they are light brown (bake for 3-5 mins on 400F). Put aside.Chop the tomatoes into small, 1-inch chunks. Chop the cucumbers into disks of 1/4 to 1/3 of an inch thick. Chop onions into small disks of about 1/3 inch long.
Red Radish: chop into thin disks. Green Pepper: Chop into small pieces of 1/3 inch. Lettuce: chop into pieces of 1-2 inches.
Garlic: crush garlic with a dash of salt and put aside. Mix immediately before serving so the salad doesn't get soggy.
Place all vegetables in a bowl, add the mashed garlic, CORTAS pomegranate molasses, freshly squeezed lemon juice, CORTAS sumac and salt and mix well with the veggies. Add the toasted bread and the CORTAS olive oil and mix again, gently so the bread doesn't break much.Sahtein!
